Colombia Ninco is a juicy coffee with lively flavours of mango, lime and red currant. A coffee to enjoy in the sun! It is suitable for all types of brewing methods, but we mainly recommend V60 or Aeropress.
Faver Ninco comes from a long history of coffee farmers in Colombia. After growing up working with coffee, he saved enough money to buy his own plot of land 25 years ago in Santa Maria, Huila. Today, his farm Costa Rica is 10 hectares, out of five are planted with Caturra, Geisha and Pink Bourbon. Faver runs the farm together with his wife Andrea, who’s in charge of post-harvest drying. They run their farm meticulously and with great ambition, and continuously invest in infrastructure to raise the quality further. Faver says that the high quality has increased the income for the family, allowing for a more sustainable way of living as well as a more promising future for the coffee production.
This particular lot is 280 kg and of the variety Pink Bourbon, which thrives perfectly with the soil and the altitude of the farm. After picking the coffee was rested for 18 hours before undergoing a 48 hour fermentation. The coffee was then soaked, and dried under shade for 25 days.
