Ethiopia Guji
Ethiopia Guji is a favourite for many and a classic in our assortment. This year's coffee is as tasty as ever, with flavours of strawberry jam, blackberries and watermelon. This organic coffee is suitable in many situations with its clear character that is easy to recognize, even for beginners in specialty coffee.
Ethiopia Guji is a natural processed coffee which adds much to its character. The coffee cherries are dried with the peel and pulp left around the bean. The dried pulp is then removed after drying. During drying, the coffee cherry begins to ferment with natural bacteria from the air but also from the coffee cherry. The process requires a great deal of knowledge and skill to create a clean and balanced coffee, free of defects. It is also an environmentally friendly method, since very little water is needed.
Marshrashu Wekane is a second-generation coffee producer originally from Yirgacheffe in Ethiopia. After his agricultural studies at the University of Addis Ababa, he established the washing station Dimtu Hambela in Guji 2019. He chose the area for the good conditions that exist there with high altitude, good, rich soil and vegetation.
Today, a total of almost 2,000 farmers deliver coffee to the station, which is located at 2,200 meters above sea level. Marshrashu has about 150 farmers who he has worked with very closely ever since the start. He says that the goal of the washing station is to develop the work together with the farmers and create a consistently high-quality product, which in the long run gives everyone involved even better pay.
